Semla

Well, it’s that time of year again. Shrove Tuesday (or Pancake day) is just round the corner and people are having to decide what to give up for lent.
However, just across the water, over in Sweden, they have something a little bit different from pancakes to celebrate the Lent with. This. It’s called a Semla. And basically it’s a yummy bread bun with the top cut off and the inside carved out. The inside is mixed with almond paste, put back into the bun, topped with cream and the bun top and a small sprinkle of icing sugar.

Trust me, it’s almost worth walking to Sweden for one of these!
